EASY Southwest Quinoa Salad

My "famous" Southwest Quinoa Salad! I seriously make it for most the gatherings and workshops or classes I provide pupu's for.

1. Make quinoa (with cumin spice added to water before cooking). 2. Chop up your fav veggies including red onion. Add black beans (or any beans).

Dressing : chop a bunch of cilantro, add to about 1/3 or more of olive oil, juice of a lime or so, and 1-2 drops each of these oils. Add a touch of salt and pepper.

Gluten Free! Dairy Free! So Yummy!

I throw this over a bed of greens and spinach, always lots of avocado! and eat with tortilla chips 😜 and a beer or bubbly water with Lime oil!

I love making this dressing to use on salads, over veggies, and more. You could even add your favorite hot sauce to the dressing to spice it up!
